Cantaloupe & Mint Gazpacho

Ingredients:

  • 4 cups ripe cantaloupe, peeled and cubed

  • 1/2 cup cucumber, peeled and diced

  • 1/4 cup red bell pepper, chopped

  • 1/4 cup red onion, chopped

  • 1 cup fresh mint leaves

  • 2 tablespoons lime juice

  • 1 tablespoon honey (optional)

  • Salt and pepper, to taste

  • 1-2 cups chilled vegetable broth or water (adjust for desired consistency)

Instructions:

  1. Blend the Base: In a blender, combine the cantaloupe, cucumber, red bell pepper, red onion, and mint leaves. Blend until smooth.

  2. Add Flavor: Pour in the lime juice and honey, if using. Season with salt and pepper to taste.
