Ingredients:
4 cups ripe cantaloupe, peeled and cubed
1/2 cup cucumber, peeled and diced
1/4 cup red bell pepper, chopped
1/4 cup red onion, chopped
1 cup fresh mint leaves
2 tablespoons lime juice
1 tablespoon honey (optional)
Salt and pepper, to taste
1-2 cups chilled vegetable broth or water (adjust for desired consistency)
Instructions:
Blend the Base: In a blender, combine the cantaloupe, cucumber, red bell pepper, red onion, and mint leaves. Blend until smooth.
Add Flavor: Pour in the lime juice and honey, if using. Season with salt and pepper to taste.
Adjust Consistency: Gradually add the chilled vegetable broth or water, blending until you achieve your preferred consistency.
Chill: Transfer the gazpacho into a serving bowl or pitcher and chill in the refrigerator for at least 1 hour to let the flavors meld.
