Roasted Fig & Rosemary Chicken

Roasted Fig & Rosemary Chicken Recipe

Health Benefits: Figs are high in fiber, which supports digestion, and rosemary helps reduce inflammation and support brain health.

Ingredients:

  • 4 bone-in, skin-on chicken thighs

  • 1 cup fresh figs, halved

  • 2 tablespoons fresh rosemary, chopped

  • 3 tablespoons olive oil

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 tablespoon honey

  • Juice of 1 lemon

  • 4 cloves garlic, minced

  • Optional: crumbled goat cheese for serving

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).

  2. Prepare the Marinade: In a mixing bowl, combine olive oil, honey, lemon juice, minced garlic, chopped rosemary, salt, and black pepper. Whisk until well mixed.

  3. Marinate the Chicken: Place the chicken thighs in a large bowl or a resealable bag. Pour half of the marinade over the chicken, ensuring each piece is evenly coated. Allow to marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

  4. Prepare the Baking Dish: In a baking dish, arrange the marinated chicken thighs skin-side up. Scatter the halved figs around the chicken.

  5. Drizzle the Remaining Marinade: Pour the remaining marinade over the chicken and figs, ensuring everything is well-coated for that extra flavor boost.

  6. Roast: Bake in the preheated oven for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is crispy and golden.

  7. Serve: Remove from the oven and let rest for a few minutes. If desired, sprinkle crumbled goat cheese over the top for a creamy finish. Serve warm with your choice of sides, and enjoy the delightful harmony of flavors!

This roasted fig and rosemary chicken brings a touch of elegance to any dinner table, infusing your meal with that quirky charm we all love!
