Ingredients

  • 1 cup cooked quinoa or brown rice

  • 8 oz shrimp, peeled and deveined

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • Salt and pepper, to taste

  • 1 cup steamed broccoli florets

  • 1 cup shredded carrots

  • 1 cup cherry tomatoes, halved

  • 1 avocado, sliced

  • Fresh cilantro or parsley, for garnish

  • Lemon wedges, for serving

Instructions

  1. Cook the Base: Prepare quinoa or brown rice according to package instructions. Fluff and set aside.

  2. Season the Shrimp: In a bowl, combine shrimp with olive oil, garlic powder, paprika, salt, and pepper. Mix until evenly coated.

  3. Sauté Shrimp: In a skillet over medium heat, add the seasoned shrimp. Cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove from heat.

  4. Assemble the Bowl: In each bowl, start with a generous scoop of quinoa or rice. Layer shrimp on top, followed by steamed broccoli, shredded carrots, cherry tomatoes, and avocado slices.

  5. Garnish: Sprinkle with fresh cilantro or parsley for a pop of freshness. Serve with lemon wedges on the side for an extra zing!
